Five Great Early Spring Vegetables For Your Container Garden

Collard Greens

Collards grow well in containers.  The seeds can germinate in temperatures as low as 40°F.  These hearty plants can thrive in temperatures between 40°F and 85°F.  Collard greens have been known to tolerate temperatures as low as 10°F.  Allow 50 to 70 days from germination to harvest.
Brussel Sprouts

This cool weather champion is an excellent addition to your spring container garden.  Brussel sprouts can germinate in temperatures as low as 45°.   The plant grows best when the weather is between 45° and 75°F.  Once it starts growing, the sprouts can tolerate temperatures as low as 20°F.  Allow 90 to 100 days from germination to harvest.
Peas

When properly trellised, peas will thrive in containers.  Seeds can germinate in temperatures as low as 40°F.  Once the plant has started growing, it can survive temperatures as low as 25°F. The optimal temperature range for peas is 55°F to 70°F.  Allow 60 to 74 days from germination to harvest.
Spinach

Spinach is an excellent choice for early spring container gardens.  The seeds can germinate in temperatures as low as 35°F.  This vegetable grows optimally when the temperature is between 60°F and 65°.  An excellent growing strategy is to plant a new set every two weeks until mid-spring.   Allow 35 to 50 days for harvesting.
Broccoli

Broccoli grows well in large containers and bins. The plant can thrive in temperatures as low as 50°F.  Although it can briefly handle freezing temperatures, extended exposure can cause the heads to form prematurely.  The optimal temperature for broccoli is between 65°F and 80°F. Allow 48 to 65 days from germination to harvest.
